Toffee Chip Cookies

Toffee chip cookies, your new favorite cookie recipe. Rich buttery brown sugar flavor with tons of toffee bits, chocolate, and pecans! These are crispy around the edges and chewy in the middle, the perfect cookie.

Ingredients
  • 1 stick plus 5 tbsp salted butter (softened)
  • 1 1/2 cup dark brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 1/2 cup whole wheat flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1/2 cup chopped pecans (you can substitute any nut)
  • 1 cup heath English toffee bits
  • 3 oz bar of dark chocolate (I like 72%)
Instructions
  1. Preheat your oven to 350°F. Place softened butter and brown sugar into a mixing bowl and stir until combined.

  2. Add the vanilla extract and the egg and stir until combined.

  3. Add the flour, cornstarch and baking powder and stir until partially combined. You should still see white spots.

  4. Chop the dark chocolate into little pieces

  5. Add the chocolate, nuts, and toffee bits to the bowl and mix until fully combined.

  6. Place globs of dough, ab0out 2 tablespoons each, onto a greased cookie sheet. Leave at least 2 inches between each cookie, these spread quite a bit as they bake. 

  7. Bake for about 13 minutes. 

  8. Let cool for at least 5 minutes before removing from the pan. If they fall apart, let them cool longer. Enjoy!
