Rice Cooker Edamame Brown Rice

Rice cooker edamame brown rice! This rice is, of course, made in your rice cooker and is flavored with onion and saffron. A great side for almost anything! Flavorful but simple. Delicious but easy... Oh, did I mention its vegan? It's vegan! Perfect as a side and for meal prepping and/or bowl meals. Even if you aren't vegan (full disclosure, I'm not) you'll love this nutritious side. As stated previously, both brown rice and edamame are very nutritious. Brown rice is high in manganese and selenium https://bit.ly/3hZYURb. And, soy (edamame are immature soybeans) is super high in molybdenum and is a great source of easily digestible plant protein https://bit.ly/3i0hcSj. I used to be afraid of making savory rice without chicken stock or bullion, etc. I always thought it'd be bland. This rice cooker edamame brown rice is not bland! Even though it's quite simple to make and only has a handful of ingredients, it's very tasty. I credit a lot of its depth of flavor to nutritional yeast, it's a natural flavor enhancer! Honestly, I put it in probably 2/3 of everything I make. It's an easy, healthy addition that way ups the flavor of anything savory you're making. I use an aroma 8 cup cool touch rice cooker. The minimum amount you're supposed to cook in my rice cooker is two 'cups,' the cup that comes with that cooker is 3/4 of a standard cup. It seems like that's pretty standard for rice cookers, but be sure to check yours! There really isn't much to do for this recipe, as you'll see. Really you just mix everything in your rice cooker and follow the instructions for making brown rice. Mine simply has a "brown rice" button but it might be different for yours. Ingredients
  • 1 1/2 cup brown jasmine rice (or brown and wild rice mix)
  • to fill line water
  • 1/8 tsp saffron (crushed)
  • 1 1/2 tsp salt
  • 1 tbsp onion powder
  • 1 1/2 tbsp nutritional yeast
  • 1 cup frozen edamame
Instructions
  1. Add the brown rice to your rice cooker and then add water up to the fill line for 2 cups of brown rice.
  2. Add the rest of the ingredients to the cooker and stir.
  3. Follow the instructions for your rice cooker for making brown rice.
  4. Fluff with a fork and serve. Enjoy!
