Fun fact: despite its decadent reputation, duck fat has less saturated fat than butter! This recipe calls for duck fat but you're free to substitute butter to make it vegetarian.

This fun side dish is perfect for any fall or holiday meal! Rustic, hearty, and a little bit spicy.

Ingredients
  • 3 tbsp duck fat
  • 1 yellow onion
  • 2 cubanelle peppers
  • 1 red bell pepper
  • 2 tsp fine salt
  • 16 oz frozen yellow corn
  • 16 oz frozen baby lima beans
  • 4 cloves garlic
  • 1 tsp black pepper
  • 6 green onions
  • 1/2 tsp garlic powder
Instructions
  1. To a large pan, add: chopped onion, seeded and chopped peppers, and duck fat, and 1/2 tsp of salt. 

  2. Turn on medium heat and cook, stirring often, for 5 minutes.

  3. Add the frozen corn and baby lima beans to the pan along with the rest of the salt, pressed garlic, and black pepper. Cook an additional 10 minutes, stirring often.

  4. Add the chopped green onions and garlic powder, cook an additional 10 minutes stirring often.

    Remove from heat. Serve and enjoy!
