Gluten-Free Dairy-Free Chicken Nuggets
These are delicious, kid-friendly while being allergy-friendly. Gluten-free and dairy-free but flavor-full. This version of my gluten-free dairy-free chicken nuggets recipe calls for them to be baked but you could absolutely fry them. This baked version is just a little less crispy than a fried nugget but still great. Simply marinate the small pieces of boneless chicken thighs. Then, dredge in some seasoned gluten-free flour. Finally, bake them in the oven on high. Serve these gluten-free dairy-free chicken nuggets with whatever floats your boat. Oven fries and a vegetable would make this a balanced meal. Ingredients
  • oil spray (canola, olive, avocado… all work great)
  • Soak
  • large egg
  • 1 cup unsweetened soy milk
  • 4 tsp bread and butter pickle juice
  • 1 tsp franks red hot (or your favorite hot sauce)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ancho chili powder (can sub paprika)
  • 1 tsp coriander
  • 1/2 tsp garlic powder
  • 1 lb boneless skinless chicken thighs (you can use breasts but i prefer thighs)
  • Dredge
  • 1 cup almond flour
  • 1/3 cup corn starch or tapioca starch
  • 1/2 tsp ancho chili powder
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
Instructions
  1. Add all of your soak ingredients to a bowl, excluding the chicken. Whisk thoroughly
  2. Cut chicken into chunks, about 1 by 2 inch pieces. Add to soak.
  3. Marinate chicken in the soak mixture for at least 2 hrs, up to 24 hrs. 
  4. Preheat oven to 450 degrees Fahrenheit.
  5. Add all of your dredge ingredients to a high sided plate or pie pan. Mix thoroughly.
  6. Spray a sheet pan with oil spray, set aside
  7. Take 3 or 4 chicken chunks at a time and roll them around in the dredge until well coated (no visible wet spots)!
  8. Put the dredged chicken into the pan. After all of your chicken is in the pan, spray the chicken with a generous amount of even more oil spray.
  9. Bake your nuggets for 20 minutes on the lowest rack in your oven.
  10. Enjoy!
