These easy sugar-free ice cream sandwiches are just that... super easy! Also, delicious! They taste like a classic soft chocolate cookie with vanilla ice cream sandwich! So good. These are made with sugar-free/low-carb ice cream and sugar-free boxed cake mix. You make the cake mix similar to making a cake-mix cookie. This makes them significantly quicker and easier than more "from scratch" style recipes. I recommend using Pillsbury sugar-free cake mix, but if you have a preferred brand you can try using that. This recipe calls for devils food cake mix for that classic chocolate cookie with vanilla ice cream sandwich flavor. But, you can sub other kinds of cake to switch it up! Maybe use sugar-free yellow cake with sugar-free chocolate ice cream? Sugar-free confetti cake with vanilla ice cream and sprinkles? Go for it. The world is your oyster, as they say. While these easy sugar-free ice cream sandwiches have no added sugar, they aren't particularly low carb. At least, not the way I make them. The exact carb count will depend on which ice cream and cake mix you use. If you use Pillsbury sugar-free devil's food cake mix and Breyer's carb smart vanilla ice cream like I do... One large ice cream sandwich will have 16 grams of net carbs each. Net carbs are the total carb count minus the grams of fiber and sugar alcohols, in case you don't know what I'm talking about. Net carbs are more relevant than total carbs in foods like this because fiber and sugar alcohols don't have any significant impact on blood sugar. But, starch and sugars do. So, net carbs are basically just the grams of starch and sugar in a recipe. https://bit.ly/2BVOnr0 A large ice cream sandwich has 3 grams of sugar, these are natural sugars from the milk in the ice cream. This recipe makes 12 large ice cream sandwiches or 24 small ones. To make a smaller ice cream sandwich just follow the directions, but add a step where you cut each ice cream sandwich in half. Ingredients
  • 1/4 cup butter
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 package sugar-free devils food cake mix (I use Pillsbury brand)
  • 1/2 tsp vanilla extract
  • 1 quart sugar-free/low carb vanilla ice cream (I like Breyer's because it's pretty soft, but you can use whatever brand you like)
Instructions
  1. Easy Sugar-Free Ice Cream SandwichesPreheat oven to 350°F. Also place a Silpat or parchment paper on a large sheet pan (or two small equally sized sheet pans) and spray thoroughly with cooking spray.
  2. in a large microwave-safe bowl, melt the butter.
  3. Add the oil and the cake mix to the bowl and mix.
  4. Add the eggs and vanilla extract and mix until well combined.
  5. Scoop the dough onto the sheet pan (or sheet pans) and press out evenly to the edges of the pan with your hands.
  6. Place in the oven and bake for about 18 minutes.
  7. Remove from the oven and let cool until its room temperature, or just warm.
  8. Cover with plastic wrap and place in the freezer for about an hour.
  9. Remove from sheet pan from the freezer and uncover. Cut it down the middle. Remove half and set aside on the counter.
  10. Take the quart of ice cream out of the freezer and scoop it onto the half of the cookie in the pan.
  11. Spread the ice cream as evenly as you can. Take the half of the cookie on the counter and place it on top of the ice cream and press it down.
  12. Put the giant ice cream sandwich into the freezer for about 15 minutes.
  13. Remove it from the freezer and cut it into four large strips.
  14. Cut each strip into three pieces.
  15. Enjoy! Store wrapped in the freezer, obviously!
