Chicken bacon swiss hand pies, also including broccoli! This recipe is perfect for meal prepping. They freeze very well, that’s how I recommend storing them. Though they will keep in the fridge for a couple of days (after that the texture starts to change).
There are a few good ways to reheat these. You can heat them from frozen by baking at about 325°F for 25 minutes. If you defrost them first, you can heat them back up in a toaster oven or oven at 350°F for 12 minutes. You can also heat warm these back up in the microwave if they’re defrosted. Microwave for one minute and then 30 seconds at a time until hot. How long depends on the strength of your microwave.
There’s no dough to make for this recipe! This is another ‘semi-homemade’ style recipe using canned crescent rolls. Also featuring microwavable steamed broccoli. Either fresh or frozen broccoli will work.

I don’t recommend using shredded cheese for this, you want good-sized cubes. That way you’ll have nice big pockets of cheese. If you don’t like Swiss cheese, you’re free to substitute any variety of cheese you like. Just make sure it melts well. So basically, don’t use cheese like blue cheese that doesn’t melt well (if you don’t like swiss cheese I doubt you like blue cheese, but, you never know). Cheddar, mozzarella, provolone, Monterey jack, or even American cheese would also be delicious in this!
These are kind of overstuffed so it may be difficult to seal the dough and close them. If you can’t completely close them don’t panic! Just do your best, the melting cheese will glue it together as it bakes.
Serve these chicken bacon swiss hand pies with a salad or some veggie sticks to health them up a little. Or, if you don’t care about that, just have ’em with a bag of chips. I’m not going to lecture you.
Chicken Bacon Swiss Hand Pies

Preheat oven to 375°F. Grease a couple of sheet pans.

Steam broccoli in the microwave for 30 seconds less than package instructions. Let cool a bit.

Roughly chop broccoli and add to a large bowl, add onion powder and 1 tsp of the salt, set aside.

Chop onion, add to pan with the avocado oil.

Dice raw chicken and slice bacon. Add to pan.

Add chili powder, coriander, thyme, garlic powder, and dill, and 1/2 tsp salt to pan. Turn heat on high.

Cook until ingredients are lightly browned, stir often. Place meat in bowl with broccoli and let cool for about 10 minutes.

Cut swiss up into cubes. Add to bowl and mix.

Place egg in a small bowl or cup with water and beat well. Set aside.

Open one can of crescent rolls and separate into 4 rectangles (2 rolls per rectangle). Use a pastry brush to brush the middle seam of each rectangle with the egg mixture and then pinch together.

Take about 1/2 of a cup of filling and place on half of each rectangle. Fold the other half over and do your best to press all of the edges of dough together. These are kind of over stuffed so it may be difficult, if you can't completely don't panic, the melted cheese will glue it together as it bakes!

Gently transfer to a sheet pan

Repeat steps 10-12 twice more with the rest of the crescent rolls.

Brush the top of each pie with more egg mixture, it'll help them brown.

Place in the oven and bake for 25 minutes.

Enjoy! Wait until these are fully cooled before wrapping them up and putting them in the freezer or fridge.
