Gluten-Free Dairy-Free Chicken Fried Steak

Pounded or cube steak dredged similarly to fried chicken and shallow fried, ideally in a cast-iron skillet that is older than you are, but any heavy bottom skillet will do. Can’t have everything. Makes 4 large servings or up to 8 smaller ones.

I like serving this with sauteed green beans and mashed potatoes. Topped, of course, with that sausage gravy!

Marinate that Steak

  1. In a bowl, large enough to fit all of your steaks, crack your eggs.
  2. Add salt, hot sauce, Worcestershire sauce, salt, herbs, and spices. Whisk thoroughly.
  3. Pour in your soy milk while stirring.
  4. Add your steak, making sure it all gets covered in the soak. Cover and marinate in the fridge for at least an hour, up to overnight.

Fry that Steak

  1. Measure and mix all of your dredge ingredients thoroughly in a high sided plate or pie pan.
  2. Add about a half cup of oil to your pan, you want about a half-inch of oil in your pan. You want to use a pan large enough, ideally, to fit two steaks at once.
  3. Turn your burner on medium-high and preheat your oil, you'll know its hot enough when you put the end of a wooden spoon in it and it sizzles.
  4. Take your marinated steak out of the bowl one at a time and drain off excess soak.
  5. Dredge your steak in the flour mixture, cover thoroughly, no wet spots!
  6. Put steak in your hot pan, cook until brown on one side then flip with tongs or a fork (about 4 minutes), then remove from the pan and place on a plate with paper towels to soak up excess grease. Pat the top to soak up excess grease as well.
  7. Repeat until you run out of steak to fry.
  8. Enjoy!
