Learn how I make super crispy oven fries, every single time! This is more of a method than a true recipe because there are almost unlimited variations.
Similar to how a lot of people double fry their french fries to make them extra crispy restaurant-style, these are double baked! In the first step, the fries are simply baked with salt and a little paprika. No oil in this step! This helps dry the fries out so they’ll crisp up later. In the second step you add any oil or fat of your choice, any salt-free seasoning you want and bake at a higher temperature to brown and crisp them.
My biggest secret to these is to put these fries in the fridge until they’re cold between the first and the second step. This makes the fries even better for you by creating resistant starch. Seriously, go look it up its fascinating. Plus, I think it helps get them even crispier! It also means you can easily prep these the night before.
These are awesome plain, but here are some ideas for fun variations.
- Duck fat truffle fries: use 1 1/2 tbsp duck fat, a 1/2 tbsp white truffle oil, and a tsp of dried thyme.
- Seasoned fries: use seasoned salt instead of regular salt in the first step.
- Lemon pepper fries: use 1 1/4 tsp of salt-free lemon-pepper seasoning and use two tablespoons of neutral oil.
- Italian fries: use two tablespoons of olive oil and 1 1/2 tsp of Italian seasoning.
- Garlic and herb fries: use a few cloves of crushed garlic, a 1/2 tsp of dried dill, and 1 tsp of dried parsley with two tbsp of olive oil.

Preheat your oven to 375 degrees Fahrenheit. Slice two pounds of russet potatoes steak fry style. About a quarter-inch thick. I prefer leaving them unpeeled but you can peel them if you want.

Put them on a large sheet pan (nonstick preferred) and season with the salt and paprika. Rub the seasoning in well. Spread them out into a single layer (it's okay if a few overlap).

Bake at 375 for about 25 minutes or until just cooked through.

Remove from the oven and loosen fries with a spatula, let cool.

Place in the fridge for at least two hours.
